This bread is super quick to make, dairy free (and gluten free if you use gluten free oats).
You will need:
500ml Soy Natural Yogurt
Porridge Oats (make sure these are gluten free if you wish)
2 teasp Bread Soda
Pour the 500ml carton of yogurt into a bowl. Refill the yogurt carton twice with oats and add to the mixture along with the bread soda. You will need a spatula to scrape the sides of the yogurt carton as the oats will stick.
Put into a greased 2lb loaf tin and sprinkle over oat bran(again gluten free if desired)
Bake at 180C (170C fan) for 50 mins. Take out of tin, and put back in oven for last 10 minutes.
Cool on a wire rack.
Serve with your favourite dairy free spread or jam or honey as part of breakfast or for lunch it goes great with mushroom soup or salad. While I do prefer my other brown bread recipe, you can’t beat this one for speed, you can rustle it up in no time while you’re cooking dinner.
Notes: This recipe is only gluten free if you ensure the oats are gluten free. I tweaked this recipe from a filling and healthy Weight Watchers recipe to make it dairy free.
