Smoked Salmon and Lime Spaghetti
|This is a very quick and handy mid-week meal and makes a change from pasta pesto when I’ve collected boys from school, brought them to 100 activities, helped with homework and forgotten to leave time for feeding them! My boy who doesn’t like smoked salmon thought it was ham. I didn’t enlighten him. I’m sure it would work equally well with pancetta or bacon lardons if you can’t get them to eat salmon!
Smoked Salmon and Lime Spaghetti
Quick and easy midweek dinner
Ingredients
- 200 g Smoked Salmon
- 2 limes Unwaxed if available
- 300 g Spaghetti
- 2 tsp olive oil
- 100 g frozen peas
- 2 handfuls baby spinach
- 1 handful torn basil
- 1 clove garlic
Instructions

Cook the Spaghetti.

Juice the two limes and add zest of one.

Crush garlic and saute in pan together with the olive oil for 1 minute.

Add spaghetti, lime juice and zest, chopped smoked salmon and peas and cook for 2-3 minutes on medium heat.

Throw in the spinach and basil and cook for one more minute on medium.

Serve with a side salad for the adults, and any kids that might eat it. Enjoy!
Sounds yum, was wondering how your kids haf such sophisticated taste and then read that they thought the smoked salmon was ham love it!
Ha ha that’s so funny. I do actually one who will say his favourite food is salmon, but it’s fluke I’m sure. :-)
