Recipe: Lunchbox Cookies
|Baking day here today, we made these delicious Lunchbox cookies from ‘Gimme The Recipe’ by Sheila Kiely. They were super quick and easy, and we substituted dairyfree margarine for the butter the recipe called for. A big hit all round here, even if they didn’t quite look beautiful like the ones in the book!
You will need:
100g dairy free margarine (we used Sunlite)
50g light muscovado sugar
2 tsp honey
1/2 tsp mixed spice
100g self raising flour
100g porridge oats
50g raisins
Steps:
Preheat oven to 150C
Line two baking trays with baking paper.
Melt margarine, sugar and honey together in a saucepan over a very low heat.
Remove from heat and stir in spice, fold in the flour and then mix in raisins and oats.
Spoon the mixture onto the baking trays, leave enough room or cookies to spread. I think next time I will shape them a bit as they turned out a bit rough-looking.
Bake for 15 minutes, cookies will be very soft and harden as they cool.
Cool on wire rack.
Try and hide some away in a tin for the next day. Or for the actual lunchbox. I think these will be great as they are a treat and would be considered healthy enough for my son’s lunchbox.

I must make them again too, it would be nice to have some homebaked stuff in the lunchboxes around here again.
