Recipe: Cherry Tomato and Basil Salad
|This is a super simple salad which is a perfect side to brighten up any summer plate. If you prepare it at least half an hour before eating, it will allow time for the flavours to infuse.
Ingredients:
15 – 20 Cherry tomatoes
Handful of Fresh basil leaves
1 tablesp olive oil
Freshly ground black pepper
Method:
Halve the cherry tomatoes, and place in bowl.
Tear the basil and sprinkle over.
Drizzle over the olive oil and add the pepper.
Toss just before serving.
Serve with other salads or as a side to a hot meal. It goes really well with steak or beef burgers. My boys don’t love green salad but one of them will eat this. The three year old never misses a chance to tell us ‘I don’t like tomatoes’. This also goes well with cold or hot pasta.
