Recipe: Banana Cupcakes

I had some very blackened bananas to use up but didn’t want to make the old favourite of banana bread so did a quick google. I realised I could make a basic cupcake recipe and simply add in the mashed bananas. As it is a straightforward recipe with basic methods such as sieving, breaking and beating eggs, creaming in and mashing, I decided to try and experiment and give my son a chance to do it himself. My 7 year old did all the work on these on his own, weighing, measuring, mixing etc. I just supervised and did the oven bits. He was thrilled with himself!
Banana Cupcakes
Delicious dairy free banana buns
Prep Time 20 minutes
Cook Time 25 minutes
Ingredients
- 120 g plain flour
- 120 g caster sugar
- 120 g dairy free margarine
- 2 eggs
- 2 tsp baking powder
- 2 overripe bananas
- Dried banana slices to decorate
Instructions

Preheat oven to 180C 160Fan Gas 4 and line a muffin/cupcake tin with 12 cases.

Cream sugar and margarine together until smooth.

Beat eggs and add to mixture.

Fold in flour, baking powder and mix until smooth.

Mash banana and stir in.

Spoon into cupcake cases and put in oven for 20-25 minutes until you can gently push in and it springs back.

Cool on a wire rack and decorate with dried banana slices.
Recipe Notes
Store in a sealed container for up to 4 days. Also suitable for freezing. Cool before freezing and defrost before serving.
