A(nother) Week in Dinners

Sinéad at Bumbles of Rice is hosting another week in dinners link-up this week. I have been keeping an eye on our dinners and here’s what was on the table in our house. Everything is dairy free of course.

Sunday

Roast chicken, steamed kale, carrots and roast baby potatoes in their jackets. We followed this by a really simple pear crumble. I used my usual crumble recipe but used tinned pears in juice, drained as the fruit.

 

 

Monday

On Monday we had left overs of Sunday’s chicken with freshly made mash and carrots.

 

Tuesday

My husband was at home this week and he made a huge pot of thai red curry with mushrooms and carrots in the slow cooker. I was out on Tuesday evening so the boys had this for dinner with brown rice. The curry was quite mild, made with red thai curry paste and coconut milk and the boys lapped it up. I had a sandwich rather than a heavy meal when I came home around 8.30.

 

Wednesday

We had more of the thai red curry this time on cous cous.

Thursday

I’ve been trying to clear out my larder press, and the boys had been begging for pasta pesto. I made some alphabet gluten free pasta from Feel Free for Gluten Free, with a Dolmio sauce with slow roasted garlic and tomato.  We had this with sausages and broccoli. A quick tip for cooking pasta and broccoli is to throw the broccoli in on top of the pasta after about 5 minutes simmering and allow both to simmer for a further 5 minutes. The broccoli is nice and crunchy done like this.

 

Friday

I made a cottage pie and it went down a treat.

Saturday

It being Saturday we had a lazy dinner. We had oven chips, baked beans and salmon fillets. The fussy fellow had fish fingers instead of salmon.
