Slow Cooker Bacon and Cabbage
|This time of year I go into full-on hibernation mode, I realised yesterday I haven’t put anything new on the blog since Christmas. One of my resolutions is to blog more this year. Or more consistently at least. Another resolution is healthier and smarter eating. To that end I’ve dusted off the slow cooker and been experimenting with making more than just stews and casseroles. Upon hearing that it is possible to make bacon and cabbage in the slow cooker, I was beyond curious and decided to give it a go.
Even though it seemed slightly weird to place potatoes and carrots in the pot and then plonk down the large piece of ham on top and then walk away for several hours, that’s what I did. I returned with about 2 hours to go and added in the chopped cabbage. The tenderness of the ham and the handiness of doing it all in one go has me hooked. It turned out delicious and I think one of the kids even said ‘thank you for making this’ which is a great compliment coming from the kid who usually says yuck before even tasting!
It takes less than 15 minutes to prepare, and the smugness you’ll feel knowing that dinner will be ready waiting for you that evening is wonderful! What are you waiting for, give it a go!

What’s your favourite thing to cook in the slow cooker?
This sounds super yum! I used to love boiled bacon as a kid but haven’t had it in years, know what to add to my next butchers shop now ;-)
Looks yum Laura / one of my favorite dinners. Slow cooker takes all the hard work out of it. Thanks for sharing
Thanks Mum, will make it for you when you down!
