|Potato Cakes
Potato cakes were one of those things my mother used to make occasionally for ‘tea’, a seemingly uniquely Irish meal which takes place around 6pm if you have your dinner at lunchtime. I usually forget about their existence for ages and then one day, I get inspired to make them. This evening I had a container of left over mash in the fridge and I thought of making them. Everyone in my house loves them and they are super easy to make and dairy free.
Ingredients:
450g mashed potato
70g flour
1 egg, beaten
Pepper
Salt (if desired)
Steps:
1. Put the mashed potato in a bowl and season well. Add the beaten egg and mix. Add the flour and mix well.
2. Turn onto a floured board and flatten out with rolling pin.
3. Cut into desired shape, some people like to use cookie cutters but we’ve always just cut them in wedge shapes with a knife.
4. Heat a little olive oil in the pan and fry till golden brown on each side.
They are very versatile and can be served as part of a grill or a fry, with fried mushrooms and peppers, with beans, or with a side salad.
