Classic Lemon & Sugar Pancakes
|With Pancake Tuesday or Shrove Tuesday approaching on the 28th February, I have joined up with some fabulous free from food bloggers to bring you many #FreeFromPancakes recipes. You will find everything from coconut and lime pancakes to fluffy American style pancakes and everything in between. For my recipe I am going back to basics, the type of pancakes I grew up with.
To me the word pancake conjures a picture of flat crepe style pancake that we had once a year on Pancake Tuesday when I was young. We always had it with lemon and caster sugar, lemon from a squeezy lemon, we were never so posh as to use an actual lemon. Now my kids demand pancakes regularly, it’s a weekend breakfast or brunch every so often and a must for special occasions such as birthdays or Christmas. American style pancakes and crepes are household words these days, saying you’re going to have pancakes means questions as to what type and which of the many toppings we will have.
I’ve used this same recipe for years now, only changing the milk. It works best with almond milk but it is also fine with soya, rice or cow’s milk.
Recipe for Pancakes
Makes 8-10 pancakes
You will need:
- 240g flour
- 2 eggs
- 1 litre almond milk
- 1 tablespoon sunflower oil
1) Sieve flour. Whisk the flour together with eggs and milk.
2) Heat sunflower oil in the pan. When it is quite hot, pour in a small amount of the mixture, lift the pan and swirl it to thinly cover the base of the pan. Add a little more of mixture if necessary.
3) As the batter cooks you will see it start to come away from the edge. At this point toss it or turn it over to cook the other side.
4) Serve with a squeeze of lemon and a sprinkle of caster sugar or one of your favourite toppings below:

Lemon and sugar pancakes are my all time favourites. You can’t beat that, can you? I love the idea of using almond milk in this recipe. I bet it add a little ‘je ne sais quoi’ to your crêpes (nut fan here!). xx
