Pork and Veg Stir Fry

I am on a health kick this January (again!) and following  a fairy strict healthy diet of my own. This is a quick, easy and healthy dinner I made for everyone this week and there were clear plates all round. Yes even the fussy man ate the vegetables. Well, some. He did say ‘I don like pa choi mammy’. But I was happy he ate any!

You will need:

450g diced lean pork or 4 pork loin chops (trim off all fat and dice).
200g Baby sweetcorn
1 head of pack choi
250g button mushrooms
Soy sauce
Dash of Worcestershire sauce
1 tsp Chinese five spice
Spray olive oil
Rice or noodles

How to:

  1. Chop mushrooms, pak choi and cut baby sweetcorns in half.
  2. Heat frying pan, spray with spray oil. Add in the pork and sprinkle with five spice. Fry off the pork until starting to brown.
  3. Add mushrooms and baby sweetcorns and soy sauce. Keep heat high and add a tiny bit of water if it’s starting to stick.
  4. Cook for 4 or 5 minutes then add the pak choi and cook for another minute.
  5. At this stage you can serve on a bed of rice or noodles OR add the cooked rice or noodles to the frying pan and give it a good stir before serving.

Pork Stir Fry

This was such a quick dinner, a good one to make the day you do the shopping so the vegetables are nice and fresh. Other vegetables that would taste great are:

  • carrots, chopped finely
  • onions
  • peppers
  • courgette chopped in slices then quartered
  • broccoli
  • peas
  • green beans
  • sugar snap peas
  • mangetout

Other meat options would be lean beef, chicken or turkey. The chicken or turkey would make the lowest calorie option. It is possible to make a low calorie TASTY dinner that the whole family will enjoy, there is no need to be making different dinners for everyone.
